I recently delved into my grandmother’s recipe box for inspiration and came out with this yummy dessert. I loved visiting my grandmother growing up and often would sit in her kitchen talking to her as she baked. Her cooking was simple comfort food that wrapped you in love and warmth with every bite. Many years after she passed away my cousin gave me the recipe box. It brought tears to my eyes and I spent hours looking through all the recipes finding my favorites. But after a few years, the box just got sidelined for more hip, cool recipes that I found on the internet or made on my own. I guess I’ve been craving some comfort food lately, because I recently opened up the recipe box with a determination to make every recipe!
I don’t ever remember her making this recipe, but it’s become one of my favorites from the box. I use granny smith apples to give it a little bit of tartness and the dates make it sweet, but not overpowering. Of course, the brown sugar topping gives it a yummy crunch .
Start by cutting up dates, pecans, and apples and set aside. In a large mixing bowl, or stand mixer, cream shortening and sugar. I know, I know…. people don’t use shortening anymore. But it really gives baked goods a light and delicate consistency. Beat in the egg and add sifted flour, baking soda and salt. I use a fine mesh colander to sift the dry ingredients. Once it’s combined, fold in the dates and apples. The consistency will be slightly crumbly. Spread into a 11″ x 7″ baking dish (or the closest one you have). In a separate bowl, combine brown sugar, cinnamon, and chopped pecans. My grandmother’s recipe just called for nuts, so you probably could use walnuts, almonds or even peanuts. Sprinkle this topping mixture onto the apple mixture. Bake at 350 degrees for 30 minutes. When done, cut into squares and serve warm. And for an extra wow factor, add ice cream and a drizzle of salted caramel! From my grandmother’s kitchen to yours with love. Enjoy!
Apple Date Squares
Ingredients
- ½ cup shortening
- ¾ cup granulated sugar
- 1 egg
- 1 ½ cups sifted flour
- 1 tsp. baking soda
- ¼ tsp. salt
- 2 cups finely chopped tart apples
- 1 cup cut up dates
Topping
- ¼ cup brown sugar
- 1 tsp. cinnamon
- ½ cup chopped pecans or other nuts
Instructions
- Preheat oven to 350.
- With a hand or stand mixer, cream shortening and sugar. Add the egg and beat well.
- Add sifted flour, baking soda, and salt and mix to a slightly crumbly consistency.
- Fold in apples and dates.
- Spread mixture into a 11" x 7" x 2" baking dish (or any dish that's similar in size)
- Mix the brown sugar, cinnamon and nuts for the topping and sprinkle evenly over the apple mixture.
- Bake at 350° for 30 to 35 minutes. Cut into squares and serve warm.
