Mediterranean Farro Salad

Ingredients
  

Dressing

  • 1/4 cup olive oil
  • 1/3 cup red wine vinegar
  • 3 tbsp fresh lemon juice
  • 2 cloves minced garlic
  • 1 tbsp oregano fresh or dried
  • 1 tbsp dijon mustard
  • salt and pepper to taste

Salad

  • 1 cup cucumber diced
  • 1 cup tomato diced
  • 1 cup broccoli finely chopped
  • 1 cup Farro, cooked more if preferred
  • ½ cup kalamata olives sliced
  • ½ cup red bell peppers diced
  • ½ cup feta cheese
  • ½ cup parsley, fresh
  • cup toasted pine nuts
  • 2 cups baby spinach, arugula, or kale chopped

Instructions
 

  • Pre-mix the dressing. Add all of the salad ingredients in a large bowl. Top with the dressing and mix.
